A pickle of a new deli spot

A new deli, Pickles, is opening on Ken’s Korner and it has more to offer than the name promises. With 95 different ingredients – 8 breads, 21 meats, 17 cheeses, 19 veggies and 20 sauces and condiments – to choose from, the choices for sandwich creations are endless.

Customers can create whatever they can imagine. But the less creative kinds can rely on the taste of owner Kim Bailey.

Bailey has created a broad menu with everything from classic sandwiches to paninis, from soups to salads. And, of course, there will be pickles.

“I am trying to stick to New York-style with Italian flair,” she said.

Only a sandwich connoisseur could know what it means, but basically it’s fresh, tasty subs or paninis with a taste of Italian herbs or cheeses.

The deli is called Pickles due to the owners taste for the sour goodies.

“I really like pickles,” Bailey said with a laugh.

She came up with the name when she was thinking about how to create the atmosphere of an East Coast-style deli on South Whidbey.

“The first thing that came to mind, the first thing you smell in a New York deli is pickles,” she said.

She experimented with some variations of the name, but then kept it short and sweet — make that sour.

“If the food is great, you don’t need a foofy name,” she said.

Bailey should know. She has several years of experience in the food industry. She helped open the Everett Events Center as the catering director. She also holds a degree in hospitality services.

Bailey has lived on Whidbey Island for the past seven years.

“And I don’t plan on leaving,” she said.

Pickles is opening at Ken’s Korner on Sept. 30 in the spot formerly occupied by J.W. Desserts.

Bailey is celebrating the grand opening with sandwich and soup samplers and specials.

Attracting customers to her menu of healthy, yet delicious food at reasonable prices is Bailey’s goal.

“They can get really good, tasty food, high quality, for a good price,” Bailey said.

Breakfast starts at $3.25; lunch prices range from $4.50 to $7.50.

Pickles has a breakfast and lunch menu. But customers can get meat and cheese platters and cold cuts to go, and Bailey offers catering as well.

Making the deli a place for all tastes and needs is also important to Bailey. She has a variety of vegetarian choices as well as one vegetarian special each day. She also offers wheat-free bread.

Freshness is another guiding principle for Bailey.

Her bread is delivered daily. She roasts her own turkey breast. Eventually she hopes to work with local growers to get fresh veggies from Whidbey Island.
